Jain Vegetable Dum Biryani:
Biryani special,always love making this dish.Its yummy,filling and believe me very healthy as there are lots of veges and dry fruits in this.My favourite Paneer is also something that I love to add in this biryani recipe.So lets get started.


Ingredients:
  • 2 cups Soaked Rice.
  • 2 tablespoons boiled green peas.
  • Small bowl of baby corn.
  • Small bowl French Beans medium sized chopped.
  • 150 grams of Paneer.
  • 1 cup of curd/yogurt.
  • 2-3 table spoons Fresh Cream.
  • 1 tablespoon cornflour.
  • 3-4 table spoon ghee.
  • small bowl of coriender,finely chopped.
  • small bowl of pudina,finely chopped.
  • 1 teaspoon Mari (whole black peppercorns).
  • 4-5 cloves.
  • 1 teaspoon zeera.(caraway seeds).
  • 4 cardamoms.
  • 1 small piece of cinnamon
  • 1 bay leaf(tej patta).
  • 5 cashew nuts.
  • 5 almonds.
  • 11/2 table spoon Biryani Masala.
  • 1 teaspoon Garam Masala.
  • 1 teaspoon red chilli powder.
  • 1 teaspoon turmeric powder.
  • salt to taste.
  • Little saffron.
  • Water for cooking.
 Recipe:
  • Boil water in a utensil,once its boiled add cinnamon,bay leaf,cardamoms,cloves.Mari to add flavour to water,then add rice bowl and let it cook,also add 1 tablespoon of ghee to the utensil.Meanwhile in other kadai we shall make biryani gravy.
  • Biryani is cooked generally in ghee for that authentic taste,so lets start with gravy,in a kadai take cahsewnuts and almonds and remove them once they turn golden brown.In the same kadai add black peppercorns,cloves,cardamom,cinnamon stick,bay leaf and green cardamom.
  • Add all veges i.e French Beans,Baby corn,green peas and mix everything well.
  • Take curd in a bowl,add cornflour so that the curd doesn't split when we cook it and it will also give good thick consistency,add it to the kadai.Now add all masalas i.e turmeric powder,chilli powder,biryani masala,garam masala and salt to it and mix everything well.
  • Add roasted dried fruits and paneer to the pan and mix it well.
  • On the other end,rice which should be half cooked by now, so drain it  and remove water from
    it.
  • And in the biryani gravy add fresh pudina and coriender.Just add little water .Then add steamed half rice to the gravy.On the other hand take butter in a bowl,add fresh cream and saffron strands to it and mix well.Add this on the sides of rice for nice flavour and close the lid of the utensil.Let it cook on fast flame for 5 minutes and then keep a non stick tava and keep biryani kadai on that and  reduce the flame to low for 20-25 minutes.This will help the biryani to get properly dum.
  • Your dum biryani will be ready to serve.
  • Can be served with tomato soup or curd or raita.
